I had two weeks off during the festive period, and I spent most of it suffering from the flu. Whilst everyone else had lots of interesting stories of how they spent the holidays, mine was uneventful and mostly reduced to either long hours in bed or long hours sat on the sofa watching TV. My diet consisted mainly of noodle soup and pineapple juice, so while everyone else is trying to eat more sensibly after a period of over-indulging, I’m just getting started. (Although, just 30 minutes prior to writing this post I had eaten another bowl of noodle soup, because that stuffs good.)
If you’re looking to eat guilt-free but without compromising on taste, then you’ll enjoy these chocolate bites. They’re made with just a handful of wholesome ingredients, and the method is so quick and easy I’m not sure if it’s even worth writing up. Nonetheless, you’ll find it below.
- 200g dates
- 150g cashews
- 1½ tbsp cocoa powder
- 1 tbsp honey
- A handful of dark chocolate chips
- Place all ingredients except the chocolate chips into a food processer and blitz until the mixture comes together as a paste.
- Add the chocolate chips and use the palm of your hands to mould the paste into ping pong sized balls.
- Place in the fridge for approx. 2 hours before serving
