We’re terrible when it comes to snacking. I write this just as I’m finishing off a bag of Wispa bites, and Conor is adding a packet of crushed crisps to our pasta lunch. But occassionally I try to satisfy my cravings for snacks with something that’s a little better for me. These raw coconut cashew bites are super easy to put together, and consist of just 4 wholesome ingredients, are naturally sweet, filling and taste delicious.
- 200g dates
- 150g cashews
- 15g dessicated coconut, plus extra to decorate
- 1 tbsp honey
- Place all ingredients in a food processer and blitz until the mixture comes together as a paste.
- Use palm of hands to mould the mixture into ping-pong size balls. Roll the balls in dessicated coconut to decorate.
- Place in the fridge for at least 2 hours before serving.
